This quick and simple Neapolitan recipe has a perfectly fragrant sauce that is to die for! A subtle dish that will become a staple in your kitchen.
4 Cloves garlic
1 Onion
2 Tbsp Capers
4 Tbsp Lemon juice
Handful fresh parsley
400g Spaghetti
6 Anchovies
2 Tins Chopped tomatoes
1 Tsp Chilli flakes
1 Tbsp basil
1 Tsp Oregano
Handful of olives
Oil
Salt & Pepper
Dice your garlic, onion and slice up your anchovies and olives.
Heat some oil up in your pan, and add your chopped anchovies and chilli flakes to cook for 1 minute. Then add your garlic, onion and half of your parsley then cook for a further minute.
Add your capers, olives and both tins of tomatoes. Refill a tin full with water and add it to your pot to create a sauce. Then add your lemon juice, basil, and oregano. Allow to simmer for 10 minutes.
Boil some water and cook your pasta (make sure to heavily dose the water with salt).
Put a couple wooden spoons full of your pasta water in your sauce and season with salt and pepper whilst also adding the other half of your parsley.
Drain your pasta and pour it into your sauce filled pot. Then mix it all together so everything is nicely coated getting ready to serve. Now dig in!
