Beetroot Pesto Pasta

Indulge in a vibrant and nutritious beetroot pasta. A colourful dish that delights both the eyes and the taste buds.

Ingredients:
  • 2 Cloves Garlic

  • 100g Pine Nuts

  • 200g Parmesan

  • 1 Beetroot

  • Handful of Fresh Basil

  • 300g Pasta

  • 100g Block of Feta Cheese

  • 2 tsp Olive Oil

  • Pinch of Salt & Pepper

Method:
  • Step 1

    Roughly chop your garlic (it will be blended in a minute) then either chop your feta into small cubes or crumble it with your hands.

  • Step 2

    In a pot, boil some water and dose it with a heavy amount of salt. Add your pasta and let it boil for 10-15 mins until the pasta has gone nice and soft. Make sure to keep stirring occasionally to stop it from sticking together.

  • Step 3

    To make your homemade beetroot pesto, blend your pine nuts, salt & pepper, beetroot, basil, parmesan, garlic, 2-3 spoons of your salty pasta water and a drizzle of oil.

  • Step 4

    Now drain your pasta, put it back into your saucepan then pour your beetroot pesto in and coat the pasta fully.

  • Step 5

    Plate up your pasta and crumble over your feta cheese. Top with some more fresh basil and dig in!
