Tangy lemon chicken. A dish which is truly full of flavour, perfect for a quick summer dinner or a busy night after work, this can be made within 30 minutes.
4 Chicken breasts
400g Penne Pasta
1 Lemon
2 tsp Ginger
1 tbsp Honey
125ml of chicken stock
2 tsp Lemon Pepper
1 Large onion
3 cloves of garlic
2 tsp parsley
Dice the chicken and onion, crush the garlic and finely chop the ginger.
Boil the pasta in some salty boiling water according to packet instructions.
Place the chicken in a hot pan, stir in the lemon pepper and continue to fry for 4 minutes.
Now the chicken is done, fry the onion, garlic and ginger.
Grate in the zest of a lemon and add the chicken stock, juice of a lemon, and honey.
Let simmer for 5 mins and if the sauce needs thickening create a mix in a spare mug combining water then cornflour (In that order).
If your pasta is done, drain the pasta and add it into the other pan. Mix to combine.
Plate up and top with some chopped parsley. Now dig in!
