Chorizo Gnocchi Bake

This pasta dish only takes uses minimal ingredients and tastes like it’s come straight from an italian restaurant. Perfect!

Ingredients:
  • 3 Cloves garlic

  • 1 Chorizo ring

  • 1 Tsp Chilli flakes

  • 1 Tsp Oregano

  • 1 Tsp Basil

  • 1.5 Tbsp Tomato puree

  • 150g Mozzarella

  • 2 Tins chopped tomatoes

  • 100g Parmesan

  • 150g Spinach

  • 500g Gnocchi

  • Oil

  • Salt & Pepper

Method:
  • Step 1

    Mince your garlic and thinly slice your chorizo into small slices then chop those slices in half.

  • Step 2

    Put the chorizo into a hot pan with some oil and fry for 1-2 minutes.

  • Step 3

    Now add your garlic, chilli flakes, oregano and basil cook for a minute then add your spinach and allow it to wilt.

  • Step 4

    Pour in your chopped tomatoes, fill one of the cans full with water and pour it in as well. Stir it through so it is all combined then turn down the heat and let it simmer for 5 minutes.

  • Step 5

    Preheat your oven to 180°C, then get some boiling water and begin cooking your Gnocchi in a pot according to package instructions.

  • Step 6

    When the gnocchi has cooked, drain and place into the sauce which should have formed in your pan, give it a stir so everything is coated.

  • Step 7

    Now put all of your saucey mix into a baking dish and top with all of your mozzarella. Put this in the oven for 15 mins.

  • Step 8

    Take your chorizo gnocchi bake out of the oven and serve into bowls. Now dig in!
