Cajun Gnocchi

This recipe will gnocchi your socks off! A simple and easy to make dish with lots of colours and flavours.

Ingredients:
  • 500g Gnocchi

  • 2-3 tsp Cajun Spice

  • 225g Halloumi

  • 2 Peppers

  • 350g Cherry Tomatoes

  • 1 Spring Onion

Method:
  • Step 1

    Dice the peppers and chop the cherry tomatoes in halves. Then chop your halloumi into cubes and slice up the spring onion.

  • Step 2

    In a pot, boil some water with a few pinches of salt and then put your gnocchi in the pot to cook for 2 mins. The gnocchi will float to the surface of the water when they are ready.

  • Step 3

    Heat some oil in a pan and start to fry up the halloumi until it starts to brown, then remove it from the pan and set aside.

  • Step 4

    Add some more oil to the pan if needed and fry up the peppers and cherry tomatoes for 5 mins until they start to soften.

  • Step 5

    Add the boiled gnocchi and halloumi back into the pan and season with your cajun spics and a pinch of salt and pepper and them mix to combine.

  • Step 6

    Serve up your gnocchi and sprinkle over your spring onions. Now dig in!
