Spice up your breakfast with this simple chorizo hash recipe, a flavourful Spanish twist on a breakfast favourite.
2 Medium Potatoes
1 Pepper
2 tsp Olive Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Jerk Seasoning
1 tsp Smoked Paprika
2 tsp Dried Sage
2 inch of Chorizo
2 Spring Onions
2 Eggs
2 tbsp Salsa
Chop up the potatoes and chorizo into cubes. Dice the peppers and slice up the spring onions.
In a bowl, coat the potatoes in the garlic powder, onion powder, jerk seasoning, smoked paprika, sage and olive oil.
Heat some oil in a pan and begin to fry the potatoes for 8-10 mins until they start to crisp. Then add the peppers and fry for a further 2-3 mins until they start to soften.
Finally add the chorizo to the pan and fry all together for 3 mins. This will be your potato hash.
Cook your eggs how you prefer by either frying them in a hot oiled pan for 2 mins or by poaching in some boiling water for 3-5 mins.
Plate up the potato hash and spoon on some salsa. Top with your egg and sprinkle over your spring onions. Season with a crack of salt and pepper and dig in!
