3 Cloves Garlic
2 Medium Potatoes
1 Large Carrot
2 Red Peppers
1 Onion
4 Spring Onions
1 tbsp Harissa Paste
½ Lemon
1 Tin Chopped Tomatoes
4 Eggs
100g Feta
1 tsp Coriander
1 tsp Paprika
1 tsp Cumin
1 tsp Chives
Oil
Salt & Pepper
Dice your onion and garlic then cube your potatoes and carrots. After that chop your pepper and slice the spring onions.
Place all your potatoes and carrots into a hot oiled pot and fry until they’re lightly browned.
Once browned add your pepper, onions, spring onions and garlic. Season with salt and pepper and continue to fry it all for a further 4-6 minutes.
Get your coriander, paprika, cumin salt and pepper into your pot and combine thoroughly.
Squeeze your half lemon into the pot along with your harissa paste and chopped tomatoes. Mix until fully combined.
With the back of a spoon make multiple craters in the sauce big enough for a cracked egg each.
After you’ve cracked your eggs into each crater cook for a further 5-8 minutes or until your preferred egg runniness.
When serving, crumble your feta and chives over the top. Now Dig In!
