This recipe is a cheesy twist on your classic meatballs, they are juicy and packed with lots of Mexican flavours.
400g Beef Mince
400g Pork Mince
2 tsp Ground Cinnamon
2 tsp Cumin
200g Mature Cheddar
Pinch of Salt and Pepper
1 tsp Chilli
1 Onion
1 Red Pepper
3-4 Garlic Cloves
2 tsp Paprika
1 tbsp Chipotle Paste/ Sriracha
1-2 tins Chopped Tomatoes
2 tbsp Lime Juice
Fresh Coriander
Dice your onion and pepper and finely chop your garlic and chilli.
In a bowl combine the mince meat, cumin, cinnamon, salt and pepper and then roll them into balls.
Chop the cheese into cubes, then flatten the meatballs and place a cube of cheese inside each. Then re-roll the meatballs and place in an ovenproof dish.
Heat some oil in a pan and fry your onions, chilli, garlic and red peppers for 2-3 mins.
Season with salt, pepper and paprika then add your chipotle paste/sriracha and a splash of lime juice.
Add your chopped tomatoes and coriander and mix through. Let this bubble for 2-3 mins, then pour the sauce over the raw meatballs and place it in the oven at 180 degrees celsius for 45 mins.
For the last 15 mins sprinkle some grated cheese on top and allow it to melt.
Serve it up with spaghetti and dig in!
