Carbonara pasta, spaghetti with pancetta, egg, hard parmesan cheese and cream sauce. A traditional Italian dish

Ingredients:
  • 1 Onion

  • 2 Garlic Cloves

  • 200g Bacon

  • 50g Butter

  • 50g Plain Flour

  • 100ml White Wine

  • 300ml Single Cream

  • 200ml Milk

  • 2 tsp Dried Oregano

  • 125g Cheddar Cheese

  • 2 Eggs

  • Salt & Pepper

Method:
  • Step 1

    First dice your onion and finely chop your garlic.

  • Step 2

    In a frying pan, fry your bacon until nice and crispy. Once cooked, chop your bacon into thin strips and set aside.

  • Step 3

    Now melt your butter in a pan and start to fry your onions and garlic.

  • Step 4

    Once they have gone soft and translucent mix in your flour. This should start to create a thick paste.

  • Step 5

    Then gradually add in your white wine a little bit at a time allowing it to be absorbed and then do the same with your cream and milk until you have a nice sauce consistency.

  • Step 6

    Add your cheddar cheese and allow it to melt into your sauce. Season with salt and a generous amount of black pepper. If the sauce becomes too thick, add more milk.

  • Step 7

    Beat your eggs in a bowl with some salt and pepper.

  • Step 8

    Boil your spaghetti in some salty water for 10-15 mins. Once cooked, make sure to add a spoonful of your salty pasta water to your sauce before draining the pasta and adding it to the sauce too.

  • Step 9

    Mix the pasta through the sauce until it's nicely covered then add in your chopped bacon and mix it all through.

  • Step 10

    Make a small gap in the pasta mix and pour in your eggs. Mix the eggs into your spaghetti.

  • Step 11

    Plate it up with a sprinkling of grated parmesan on top. Now dig in!
