Heat up your taste buds with our spicy halloumi stew. A zesty and indulgent Mediterranean delight!
200g Halloumi
2 Clove Garlic
1 Tin Chopped Tomatoes
250g Spinach
2 tsp Cayenne
1 Veggie Stock Cube
1 tbsp Ras Al Haneut
60g Sultanas
240g Couscous
Flaked almonds
Chop your halloumi into cubes, then peel and finely chop your garlic.
Crumble the stock cube in 250ml of water and mix until is has dissolved. Then add it to a bowl with your couscous and sultanas. Season with salt and pepper and cover with a lid leaving it aside for 10 mins.
Heat some oil in a pan and fry off your halloumi for 6-8 mins until it starts to go golden, then add the garlic and fry for a further 2 mins.
Add the cayenne and ras al haneut to your pan and cook for 30 seconds before adding your chopped tomatoes and spinach and let it wilt down. Let this bubble for about 2 mins.
Serve up your couscous in a bowl and top with your halloumi stew. Garnish with a sprinkle of flaked almonds and dig in!
