Delight in the flavours of our halloumi bake recipe. A cheesy and savoury dish that's simply irresistible!
3 Cloves garlic
1 Courgette (Zucchini)
1 Onion
1 Aubergine
1 Tsp Cumin
1 Tsp Smoked paprika
1 Tsp Basil
1 Tsp Oregano
1 Tin chopped tomatoes
1 Tbsp Tomato puree
1 Tbsp Honey
Halloumi
Oil
Salt & Pepper
Finely dice your garlic, onion now based on your preference, cut up your courgette/zucchini and aubergine to whatever thickness you desire. We prefer small more can fit on every mouthful. You'll also need to slice your halloumi into thin slices but make sure there are big!
Put oil in an oven proof pot and fry your onions, garlic for 2 minutes.
Follow that up with your courgette, aubergine, honey, herbs/spices, salt and pepper then give a good stir until everything is nicely coated and then fry for 5 minutes.
Pour in your tinned tomatoes then fill the can up with water and pour that in as well. Also add your tomato puree and give a good stir then leave to simmer for a further 5 minutes.
Now turn off the heat, give your sauce one last stir and place your halloumi on top.
Put your oven proof pot into the oven for 15 minutes now to get the halloumi to cook.
Your bake should now be done, take it out of the oven and begin to serve. Now dig in!
