Deliciously creamy salmon pasta recipe with a perfect balance of flavours. Easy to make and satisfyingly flavourful
100g Smoked Salmon
150ml Cream
300g Linguine
50g Butter
3 Garlic Cloves
1 Onion
100ml White Wine
Juice of 1 Lemon
Salt and Pepper
50g Spinach
50g Parmesan
Dice your onions and finely chop your garlic, then slice your smoked salmon into bite sized pieces about 1cm.
In a large pan boil the linguine in some salty water for 10 mins.
In a different pan, melt the butter in over a medium heat and then fry the onions and garlic in it for 3-4 mins until they are nice, soft and fragrant
Once your onions and garlic are nicely cooked, squeeze in your lemon juice and then add your white wine and allow it to reduce for 1-2 mins.
Stir in your cream and season your sauce with salt and pepper. Then grate in 3 quarters of your Parmesan and add some of the salty pasta water and allow this to simmer for 2-3 mins.
Once the linguine has cooked, drain it, and add to the pan containing your sauce. Toss to evenly coat the pasta.
Add the spinach and let it wilt down. Then stir in the smoked salmon until everything is combined.
Serve it up with the rest of your grated parmesan and a crack of pepper. Now dig in!
