This is pure deli delight, you can forget about spending a fortune at your local deli on a sandwich when you can just make this at home.
2 Chicken breasts
1 Egg
100g Flour
150g Breadcrumbs
Sliced Parma ham
25g Pesto
1 Mozzarella ball
50g Sundried tomatoes
Deli style roll/sub
Begin by roughly chopping your sundried tomatoes and slicing your mozzarella. Then flatten your chicken breast by bashing them down with a rolling pin until they’re relatively even.
Separate 3 bowls and fill each with one of the following: a beaten egg, flour and breadcrumbs. Line these up close together for the next step.
Coat the chicken breasts in flour until covered, then dip it in the egg mix, lastly cover the chicken in the breadcrumbs and set aside for frying.
Shallow fry the chicken breasts in some oil on each side for 6-8 minutes until crispy on the outside and cooked through the middle.
Slice open your bread and begin buttering one side. Then evenly spread your pesto on the buttered side of bread.
Layer your sandwich with the sliced sundried tomatoes, a thick layer of parma ham, your chicken breast and top with the sliced mozzarella.
Season with salt and pepper and leave your sandwich open under the grill until the mozzarella starts to bubble and melt.
Take your sandwich out from under the grill. Close and slice to reveal the beautiful layers.
